These two Tojiro DP Cobalt Alloy 3-Layered Chef Knives F-807 and F-808 are my favorite all-around no-nonsense knives, 7 and 8 inch respectively. Actually I use mostly the shorter 7-inch F-807, in my humble opinion it's second only to Wüsthof CLASSIC Extra Wide 16cm 4584/16, judging by performance, ergonomics, maintenance and universality. The Tojiro DP Cobalt Alloy 3-Layered … [Read more...] about Tojiro DP Cobalt Alloy 3-Layered Chef Knives F-807 and F-808

Toledo Kitchen Knives
Visiting Spain I could not miss opportunity to get acquainted with the Spanish kitchen knives. Spain is the home of Arcos, one of the oldest European knife manufacturers. Toledo has been know for centuries for its steel, swords and artisans. Almost every historic novel I read in my childhood featured a rapier or a sword "made from the finest Toledo steel". Well, I started … [Read more...] about Toledo Kitchen Knives
Bob Kramer Knife at 1,995 Euro
I saw this knife in a display window of the Zwilling knife shop at Marienplatz, Munich. While the price of 1,995 Euro is beyond my perception of any knife's value, I could not help myself not admiring its shape, balance and finishing. It's definitely more piece of art than a kitchen tool. … [Read more...] about Bob Kramer Knife at 1,995 Euro
F.Dick 1905, Paring Knife (Officemesser), 9cm or 3 1/2″
Bought on my recent trip to Munich, the F.Dick 1905 paring knife is everything one can expect from a paring knife - versatile, small and extremely sharp. The handle has these distinctive and easily recognizable F.Dick brandmark steel rings. I bought it for 40 euro which is bargain considering the knife quality. Actually I regret not buying as well the F.Dick chef's 8" knife … [Read more...] about F.Dick 1905, Paring Knife (Officemesser), 9cm or 3 1/2″

Miyabi 5000DP Gyutoh 200 Chef Knife 8-Inch
The Miyabi 5000DP Gyutoh 200 chef knife 8-Inch is the latest addition to my growing collection of kitchen knives. This knife is a typical Japanese Gyutoh knife manufactured by Zwilling J.A. Henckels Japan, the most universal chef's tool with VG-10 core (actuall it goes under CMV60 designation which is pretty much the same as VG-10) at about 60 Rockwell hardness, sandwiched … [Read more...] about Miyabi 5000DP Gyutoh 200 Chef Knife 8-Inch

Deglon Cuisine Ideale Bread Knife, 8-Inch
No Sabatier company owns Sabatier brand and yet the name Sabatier has become an industry de-facto standard as a superior performance professional service knife. This name originated in Thiers, France at the beginning of the 1800s. There are many knife manufactures using Sabatier as part of their branding. In 1921 Jean Déglon, from Switzerland, set up his workshop in Thiers, … [Read more...] about Deglon Cuisine Ideale Bread Knife, 8-Inch
Deglon Ceramics Knife Sharpener, 9-Inch
The Deglon Ceramics Knife Sharpener has very smooth milky white surface, something to the tune of 2,000 grit by feeling of it. Yet this smooth feeling does not make it any less abrasive, even the light stroke of the knife leave black steel residue on milky white surface. I love this tool, it's bit more abrasive than Wusthof Diamond-Coated Sharpening Steel but it's still a very … [Read more...] about Deglon Ceramics Knife Sharpener, 9-Inch
Wusthof Diamond-Coated Sharpening Steel
I bought the Wusthof Diamond-Coated Sharpening Steel (10 inch, model 4483) about two years ago in Vienna, Austria. After almost daily use over these two years it still looks and performs brand-new, no coating damage, no tear and wear. Unlike Deglon Oval Diamond Steel Knife Sharpener it's more steeling than grinding tool, with extra fine grit diamond coating. Actually the … [Read more...] about Wusthof Diamond-Coated Sharpening Steel
