My favorite tool in the kitchen. ~only knife I use. Bought in Kyoto yrs ago. Aritsugu, company been around for ~500y and used to make swords. Could I cut food with the cheaper knifes I have? Yes. But this brings me more pleasure for some reason I can’t explain.
